What you can do
Ingredient usage
Record what the kitchen consumes and wastes for each preparation. Ingredient movements connect to an ingredient and identify their source meal line in text. Kitchen Lead records signed quantities, units and occurrence times so Service Manager can distinguish use from waste during a partially served order. Recipe ingredients supplies planned quantities per yield; actual movement remains a separate record.
For a prepared meal line, the kitchen lead reads the approved recipe and its ingredient quantities. They record signed movement quantities with units, occurrence time and a source meal line. A separate movement captures waste so it does not inflate the served portion count. The operation key helps identify the action that produced the movement.
How the work is organized
- Working scope. Kitchen Lead reads the approved recipe yield and the ingredient units before recording consumption for a meal line.
- Decision point. Service Manager compares movement quantities with the line and investigates a second entry with the same operation key.
- Evidence. ingredient movements keeps the signed quantity, source line, time and operation key; meal lines keeps the served count.
What to agree during setup
Agree the base unit for each ingredient and conversion practice before recording movement. Review allergen declarations as part of menu setup and line preparation. Decide who may correct a movement and how the corrected record remains traceable. A recipe allowance is planning information; actual consumption and waste need recorded movements.
Write down the policy in the team’s operating procedure before the first service cycle. Give each role the access it needs for its step and rehearse denied access as well as the successful path. The organization and location on the order should match the staff and service work involved.
Check the handoff on an actual case
Prepare a meal line, then compare the recipe yield with actual ingredient movements. Check the source line and operation key on each movement. Add a waste movement and confirm that served portions remain unchanged. A repeated operation should be reviewed against its earlier key before staff record another movement.
Have Service Manager compare the movement with the source line and the ingredient unit. A repeated key needs investigation before another movement is entered. Keep the original movement visible if the quantity needs correction.
What your team sees
- Active Ingredients — Find eligible ingredients and read their base units and allergen declarations.
