Prepare a job from the approved recipe

A recipe identifies one primary output and its reference quantity. Planning a job scales each ingredient and packaging requirement in its own product unit, retaining the reviewed conversion and rounding basis. Mass, liquid volume and packaging counts stay distinct.

The released job freezes its recipe, routing, planned output, selected food checks, shelf-life basis and standards. Independent Kitchen Manager approval excludes the actual preparer and material editors. Later master changes cannot silently replace the method used for existing work.

Work instructions describe actual preparation and packing operations. Intermediate progress helps the team follow work still in process; it does not create another finished-stock receipt.

Issue ingredients into the job

Materials staged near the kitchen remain inventory until actual issue. The issue moves the exact stock quantity and carrying value into exclusive WIP, preserving ingredient lot, portion and original source.

Kitchen Operator records actual use and loss for independent acceptance. A draft observation can reserve its source but does not become accepted consumption. Confirmed use reduces the original issued-material remainder once, without issuing the same stock again.

Unused returns consume only the physically remaining, unconsumed and unreserved original issue. They create a new inventory layer at the issue basis and credit that same WIP source. Consumed ingredients cannot be recovered by reversing an empty storeroom position.

Record work and loss on a meaningful basis

Kitchen Manager independently accepts actual work and time, excluding producer, recorder and material contributors. Recorded person and machine intervals retain their real basis so another entry cannot absorb the same work twice.

Ingredient use, processing loss and packaging use have separate reconciliations. Normal loss included in output cost retains a real completion allocation; separately relieved scrap cannot also become finished-product cost. Physical yield uses a compatible declared measurement, not a sum of unlike units.

Kitchen measureWhat it explains
Actual ingredient useWhich issued sources entered the preparation
Packaging useWhat was used, damaged, returned or remains
Accepted workThe actual activity and approved cost basis
Terminal outputThe distinct finished quantity physically completed
Remaining WIPSources still awaiting output, return or resolution

Value completed output and preserve its condition

Independent Kitchen Manager terminal confirmation binds the actual output and attributable inputs. The fully approved completion relieves actual WIP into output at the frozen standard, with independent Finance Manager approval for every nonzero variance.

Physically completed owned food can enter valued held inventory while required fitness checks remain open. Separate independent Kitchen Manager review governs the exact population’s eligibility; releasing it adds no second output or value.

Kitchen checks retain actual result, method, unit and required evidence. A missing result is not a passing zero. Applicable expiry, opening deadlines and every active hold remain in force even after another check passes.

Keep food identity and age through handling

Tracked ingredients and prepared output retain original lot and identifiable portion history. Partial opening or release requires actual segregated populations, preserving unopened goods and any active stock or WIP claims.

Safe-use instructions and reviewed date policies follow the food through storage, transfer, return and repacking. A new container or label cannot reset its age. Nonfood supplies use their appropriate tracking without pretending every property item is a food batch.

Distinguish outlet supply from actual service

Moving prepared food to an outlet changes custody; actual service consumption has its own source quantity and carrying relief. Warehouse Manager independently authorizes the exact department-use scope, required Kitchen Manager fitness remains current, and Kitchen Operator records the actual food-service use.

A PMS charge may reference that service but owns a separate financial effect. Neither a room charge nor a recipe plan creates the stock issue. Kitchen Manager independently closes remaining job quantities, with Finance Manager approving required financial residuals; close does not repeat a completion variance or release held food.

Kitchen Production and Cost and the kitchen-to-service process bring those handoffs together.

Kitchen Production and Cost

Reconcile each WorkOrders recipe/version, released material requirement, actual ProductionEntries and terminal ProductionCompletions with WorkOrderCostEntries, BatchMaterialAllocations and BatchReconciliations at one company/property/cost cutoff; keep each ingredient's issue/use/loss/unused return and packaging in its own compatible base unit, actual accepted time sources distinct and normal included loss cost in its single terminal allocation; separate current issued WIP, physical unfinished work, valued held output and eligible completed output, show frozen standard versus attributable actual relief with the signed approved variance and residual close scope once, and never add intermediate throughput or quality release as another finished quantity/value.
